Campfire Recipes for a Dutch Oven: Amaretto Cherry Pineapple Dump Cake

This is one of the easiest dessert recipes I know that can be made directly on the fire in my dutch oven.  It's perfect for cooler camping nights.  I like to top it off with ice cream, so I usually make it the first night we hit the campground because the ice cream won't keep icy cold in my cooler for more than that.  I use a Lodge brand dutch oven, which only requires being seasoned with oil now and then.  
This recipe has endless variations you could do with it, including another favorite of mine, apple bourbon dump cake.  Just switch out the ingredients and you are good to go! Enjoy! 

You will need: 
10-inch Dutch oven
6 charcoal briquettes on the lid
enough charcoal briquettes on the bottom to sit the oven in
Baking time: 35-45 minutes
Foil is optional:  I like to line the oven with foil when I'm camping for super easy clean up.  You do not have to, the cake will bake just fine either way.  
1 yellow cake mix
1 can cherry pie filling
1 can pineapple (crushed or tidbits)
¼ cube melted margarine or butter

2 shots of Amaretto

Add cherry pie filling and pineapple to bottom of Dutch oven. Evenly sprinkle dry yellow cake mix over fruit. Drizzle melted butter or margarine over top, add the Amaretto. Bake at on medium hot coals about 35-45 minutes until done. Every now and then I rotate the dutch oven for more even baking.  
After it is done I let it sit for about 20 minutes with the lid off before I slice into it.
